Easy Peazy Chicken Cheezy

This recipe is exactly like it’s name suggests…easy! I love this recipe and don’t know why I don’t make it more often.  For someone who loves cheese and is constantly having to watch the food I put in my mouth, this recipe is perfect.  It’s low in calories and zomg so cheezy.


1 Jar or your favorite Salsa

4 -6 large chicken breasts

As much shredded chedder cheese as you like…of course the more cheese the more calories…but it’s cheese…so it doesn’t count 😉

Put about a tablespoon of your salsa on the bottom of the pan. I always use a foil pan when making this recipe because it does tend to muck up the pan quite a bit and my man slave doesn’t like cleaning it.

Place your chicken breasts down on the pan and dump the whole jar of salsa over top.  Put a bit of water on the bottom of the jar, put the lid back on and shake it…this will clean off the rest of the salsa…pour that over the chicken too!

Take your shredded cheese and sprinkle it over the chicken.

Wrap foil over the pan and pop it into the oven at about 400 degrees. Cook for about one hour or until the chicken registers between 145-150 degrees. Pull the foil off and continue cooking for another 15-20 minutes or until the chicken registers at 180 degrees.

You are done! It’s seriously that easy.  I like to make Basmati rice with this and pour extra sauce on top. It would probably taste really good with tortilla chips too!

    That does sound easy peasy! And I don’t have many good chicken recipes, so I’ll tuck this one away.
